Indian Potatoes and Cauliflower (Aloo Gobi)
An authentic Indian cauliflower and potato dish made with tomatoes and onions and flavored with delicious Indian spices, aloo gobi can be served with chapati or rice and curds.

Heat a skillet over medium-high heat with 1/8 inch of oil.

Potatoes and cauliflower should each be shallow-fried for 5 to 7 minutes, or until light brown.

Place in a bowl.

In the same skillet, add 1 tablespoon oil and turn down the heat to medium.

To the hot oil, add the roasted cumin and cook for one minute.

For one minute, add the green chile pepper and garlic.

Add onion and ginger garlic paste; stir-fry for about 5 minutes, or until onion turns translucent.
