Low-Fat Vegan Pumpkin Chocolate Chip Muffins
Tasty low-fat vegan muffins rely on pumpkin for flavor and moist texture. Chocolate chips will make them disappear in a hurry.
Set oven to 375 degrees Fahrenheit (190 degrees C).
Place paper liners in 12 muffin tins.
In a big bowl, combine whole wheat flour, brown sugar, baking powder, cinnamon, baking soda, salt, and nutmeg.
Add chocolate chips after mixing dry ingredients with pumpkin and water until just moistened.
Pour batter into muffin tins that have been prepared, filling each cup to just below the top.
Bake for 25 to 30 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.
Allow muffins to cool in pans for five minutes before transferring to a wire rack to finish cooling.
