Perfect Berry Shortcakes
You don’t need a food processor, pastry cutter, rolling pin or cookie cutter to make these sweet biscuits. This shortcake recipe yields a simple, foolproof biscuit that’s crisp yet delicate.
Set the lower-middle oven rack and raise the temperature to 425 degrees.
In a medium bowl, combine the flour, salt, baking powder, and 3 tbs.
sugar.
Toss the dry ingredients in 2 Tbs.
of the grated butter using a box grater with coarse holes.
Grate again, then toss with the remaining butter.
Pour the egg-half-and-half mixture into the flour mixture.
Toss to create substantial clumps with a fork.
If dough won’t come together, lightly press clumps into balls and add a teaspoon more half-and-half to the bowl.
