Pomelo Salad with Peanuts, Mint, and Chile

Pomelo Salad with Peanuts, Mint, and Chile
A sweet and sour chile dressing is added to this pomelo salad with coconut, peanuts, and fresh mint that is inspired by Thai cuisine.

Over low heat, toast coconut, stirring frequently, for 3 to 5 minutes, until fragrant.

Place aside.

Remove the pomelo’s top and bottom by about half an inch on each side.

Cut into the fruit’s rind about half an inch vertically.

Peel the rind in pieces.

Remove any substantial membrane pieces.

Fruit that has been split open and segmented Off each slice’s membrane, peel it.

Slices of pomelo should be put in a small bowl.

Top with toasted peanuts, shallots, mint, and coconut.

In a jar, mix palm sugar and hot water.

Until the sugar dissolves, stir.

Add fish sauce, lime juice, and chile pepper by whisking.

Apply dressing to the salad.
