Zucchini Plum Bread
Use leftover summer produce to create a tasty breakfast treat the whole family will love with zucchini plum bread.
Set oven to 350 degrees Fahrenheit (175 degrees C).
Cooking spray or parchment paper should be used to line two bread pans.
In a bowl, combine zucchini oil, 1 cup white sugar, 1 cup brown sugar, eggs, and vanilla extract.
Whisk until well combined.
In a different bowl, combine the all-purpose flour, whole wheat flour, baking soda, salt, 1 teaspoon of cinnamon, and baking powder.
To just combine the batter, gradually incorporate the flour mixture into the zucchini mixture.
Fold in the plums.
Batter should be poured into the prepared pans.
Sprinkle batter with a mixture of 1 tablespoon white sugar and 1 teaspoon cinnamon made in a small bowl.
