Fluffy Gluten Free Cornbread
Millet flour, cornmeal, and rice flour are used in this gluten-free cornbread that is light, fluffy, and a little crumbly.
Set the oven to 400 degrees Fahrenheit (200 degrees C).
Butter a 9×9-inch baking dish.
In a bowl, combine the eggs, water, and vegetable oil and whisk until well combined.
Make a well in the center of the cornmeal, millet flour, rice flour, sugar, baking powder, and salt in a separate, large bowl.
Fill the well with the liquid mixture, then stir it together briefly.
