These mouthwatering, cheesy little corn muffins are stuffed with chunks of bacon, onion, and jalapeno.

Set the oven to 350 degrees Fahrenheit (175 degrees C).

Spray nonstick cooking spray into 48 mini muffin tin cups.

In a big bowl, combine cornmeal, sugar, baking soda, and salt.

Add the jalapenos, onion, and garlic, and stir.

Mix well after adding melted butter.

The cornmeal mixture should be thoroughly combined with the bacon, eggs, and corn buttermilk.

When adding the cheese, shred it into the batter.

Pour batter into muffin tins using a 1-tablespoon cookie scoop until they are about 3/4 full.

Bake for 18 to 20 minutes, or until puffed and golden brown, in a preheated oven.

Take out of muffin tins and allow to cool on a rack.
