Tropical Pineapple Banana Bread
The addition of chopped macadamia nuts and crushed pineapple gives this banana bread recipe a delightful tropical vacation. It’s ideal for a morning snack or an afternoon snack.
Set the oven to 350 degrees Fahrenheit (175 degrees C).
Two 8 1/2×4 1/2 loaf pans should be greased and floured.
In a large mixing bowl, combine sugar and butter.
Beat on medium speed for 2 minutes, or until creamy.
One at a time, beat in the eggs, combining just after each addition.
Add vanilla, crushed pineapple, and bananas that have been mashed.
In a different bowl, combine the flour, salt, baking soda, and cinnamon and whisk until well combined.
Stir in the macadamia nuts until evenly coated.
Stir just until combined before adding the flour mixture to the banana mixture.
Evenly distribute the batter among the prepared loaf pans.
Bake in the preheated oven for about 1 hour and 10 minutes, or until a toothpick inserted in the centres comes out clean.
