An excellent but simple recipe for using up extra ground beef, elk, moose, or venison. It is easily multiplied and freezes extremely well. Serve with cheese and a tasty mustard sauce on crackers.

In a large bowl mix together the ground beef and water until well blended.

Season with garlic powder curing mixture liquid smoke and mustard seed and mix thoroughly.

It is best to use your hands for this – like meatloaf.

Form the mixture into two rolls and wrap with aluminum foil.

Refrigerate for 24 hours.

Preheat the oven to 350 degrees F (175 degrees C).

Remove foil from the beef and poke holes in the bottom of the rolls.

Place them on a roasting rack in a shallow roasting pan to catch the drippings.

Bake for 1 hour in the preheated oven.

Cool then wrap in plastic or foil and refrigerate until cold before slicing.

Four eggs, three cups of flour, two cups of sugar, and one cup of butter make up the bulk of this traditional yellow layer cake.

Preheat oven to 350 degrees F (175 degrees C).

Grease and flour three 9-inch round pans.

Beat butter and 1 cup of sugar with an electric mixer in a large bowl until light and fluffy.

The mixture should be noticeably lighter in color.

In a separate bowl beat egg yolks well then add to butter mixture.

Sift together flour and baking powder.

Add alternately with the milk to the butter-sugar mixture.

Beat well.

Add vanilla.

Beat egg whites until stiff but not dry.

Add 1 cup sugar to the egg whites.

Fold into cake batter.

Divide evenly into three prepared 9 inch round pans.

Bake at 350 degrees F (175 degrees C) for 25 minutes.

Set oven to 350 degrees Fahrenheit (175 degrees C).

3 9-inch round baking pans should be greased.

In a saucepan over low heat, combine 8 ounces baking chocolate and 2 tablespoons cream; cook and stir until chocolate is melted, about 5 minutes.

Set apart for cooling.

Using an electric mixer, combine 1 cup butter, 1 cup white sugar, and 1 cup brown sugar in a bowl.

Once smooth, add sour cream, 1 cup coffee, eggs, and vanilla extract.

Blend the melted chocolate mixture in gradually.

Beat the flour mixture into the butter mixture until it is well combined and smooth.

In a bowl, combine the flour, baking soda, baking powder, and salt.

Fill the three prepared baking pans with batter.

This stew is great for St. Patrick’s Day. The mixture of the beef and Guinness is awesome! I usually add more beer than the recipe calls for. Serve with mashed potatoes.

Toss the beef cubes with 1 tablespoon of vegetable oil.

In a separate bowl stir together the flour salt pepper and cayenne pepper.

Dredge the beef in this to coat.

Heat the remaining oil in a deep skillet or Dutch oven over medium-high heat.

Add the beef and brown on all sides.

Add the onions and garlic.

Stir the tomato paste into a small amount of water to dilute; pour into the pan and stir to blend.

Reduce the heat to medium cover and cook for 5 minutes.

Potato salad made with fresh green and red bell peppers, tomato, green olives, and tuna, it’s a nice change from mayo based potato salad.

Place egg in a saucepan and cover with cold water.

Bring water to a boil and immediately remove from heat.

Cover and let eggs stand in hot water for 10 to 12 minutes.

Remove from hot water cool and peel.

Cut eggs into quarters and set aside.

Meanwhile bring a large pot of salted water to a boil.

Add potatoes and cook until tender but still firm about 15 minutes.

Drain and transfer to a large bowl.

Toss potatoes with eggs bell peppers onion tomato tuna green olives olive oil and vinegar.

Season to taste with salt.

Refrigerate and serve cold

Mix in 1/2 of the dry ingredients until just combined.

Mix in remaining dry ingredients until just combined.

Fold in chopped chocolate.

Dough will be somewhat thick.

Scoop out 1 1/2 tablespoon-sized pieces of dough and roll into balls.

Place 2 inches apart on the prepared baking sheets.

A large skillet should be heated to medium-high.

Each slice of bread should have butter on one side.

Up to 4 slices of bread should be placed butter side down in the skillet.

One slice of cheese, two slices of ham, and about two tablespoons of the crushed pineapple should be placed on top of each piece.

On top, arrange the remaining bread slices butter-side up.

Sandwiches should be turned over when the bottom of the sandwich is golden brown and cooked for about a minute more.

If your skillet cannot accommodate all four sandwiches, repeat the process using the remaining ingredients.

Preheat an oven to 425 degrees F (220 degrees C).

Combine the lemon zest rosemary thyme and minced garlic in a small bowl; stir in the olive oil then season to taste with salt and pepper.

Separate the skin around the breast and thighs from the meat.

Rub the herb mixture onto the meat underneath the skin.

Cut the zested lemon in half and place half of the lemon into the cavity of the chicken along with the whole garlic cloves.

Place the chicken into a roasting pan and squeeze the remaining lemon half evenly over the skin of the chicken.
