Pear Salad I
A wonderful blend of mixed greens, pears, toasted walnuts and Gorgonzola (blue cheese) with a light tasty dressing.

Preheat the oven’s broiler.

Arrange pear slices in a single layer on a baking sheet.

Broil until nicely browned 3 to 5 minutes.

Set aside to cool.

Pour port wine into a saucepan.

Bring to a boil and cook until the wine is reduced by 1/2.

Remove from the heat and cool.

Pour the cooled wine into a blender or food processor and add the shallots garlic mustard and vinegar.

Puree until smooth.

Divide the salad greens evenly between four serving plates.

Arrange some of the broiled pear slices over each pile of greens.

Sprinkle with Gorgonzola cheese.

Drizzle dressing over each plate then sprinkle with walnuts.

If you like this can also be made in one large bowl instead of individual servings.

The edamame, cashews, and garlic scapes used to make this hummus are delicious. a wonderful way to utilize the garlic scapes from your CSA box.

In a saucepan, bring 6 cups of water to a boil.

Edamame should be cooked for 4 to 5 minutes, until soft.

Drain and chill for ten minutes.

Cashews and 1/8 teaspoon salt should be combined in the food processor’s bowl.

Blend in a few pulses, scraping down the sides frequently, until the mixture resembles firm dough.

Edamame that has been cooked, garlic scapes, coriander, pepper, lemon juice, lemon zest, and 2 teaspoons of salt should all be added and pulsed to the desired consistency.

Olive oil should be slowly added while the processor is running to achieve smooth hummus.

Season to taste with additional olive oil, salt, and pepper.

Combine sugar cocoa powder baking powder baking soda and salt together in a large bowl.

Stir quinoa mixture into sugar mixture until batter is well combined.

Fold chocolate chips and pecans into batter; pour into the prepared pan.

Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean 40 to 45 minutes.

Cool cake on a wire rack.

Puree mustard mixture to desired consistency using a stick blender.

Transfer mustard mixture to a saucepan and add water as necessary to reach a smooth consistency.

Bring mustard to a simmer reduce heat to medium and cook stirring constantly until flavors combine about 10 minutes.

In a medium bowl mix together masa harina and hot water until thoroughly combined.

Turn dough onto a clean surface and knead until pliable and smooth.

If dough is too sticky add more masa harina; if it begins to dry out sprinkle with water.

Cover dough tightly with plastic wrap and allow to stand for 30 minutes.

Preheat a cast iron skillet or griddle to medium-high.

Divide dough into 15 equal-size balls.

Using a tortilla press a rolling pin or your hands press each ball of dough flat between two sheets of plastic wrap.

When paired with zucchini noodles and your favorite sauce, these beef and pork meatballs make the ideal Whole30® meal.

In the bowl of a food processor, combine the onion and garlic; process until very finely minced.

Add beef, pork, egg, salt, pepper, basil, oregano, balsamic vinegar, tomato paste, and red pepper flakes to the onion mixture that has been transferred to a large bowl.

With your hands, combine the ingredients until they are all distributed equally.

Use grapeseed oil to coat a cast iron griddle or pan, then heat it up over low heat.

Create meatballs with an ice cream scoop, then place them directly onto a preheated griddle.

Do not crowd.

Cook for 15 to 20 minutes per batch, turning occasionally, until browned on all sides.

A center-inserted instant-read thermometer should register at least 160 degrees Fahrenheit (71 degrees C).

Transfer to a plate lined with paper towels.

Prepare a heat-proof container of water with a sous vide cooker.

Fill a bowl with enough ice water to cover eggs; set aside.

Fill a saucepan with water and bring to a boil.

Add eggs to boiling water and cook until whites are set exactly 5 minutes.

Transfer eggs to the ice bath to stop the cooking process at least 1 minute.
